Abstract
Highland govedo vodi porijeklo iz Škotske. Danas se uzgaja većim dijelom u Ujedinjenom Kraljevstvu, međutim postoje uzgojne organizacije diljem svijeta. Na području Republike Hrvatske zastupljena je u jako malom broju, oko 1% od ukupno 4% ostalih pasmina koje su manje zastupljene. Mesna je pasmina izrazito pogodna za ekstenzivni uzgoj, budući da podnosi nepovoljne vremenske uvjete, a dobro iskorištava krmiva lošije kvalitete. Imaju izražen majčinski instinkt, te lakoću teljenja. Meso dobiveno od Highland pasmine odlikuje velika mekoća i sočnost, te je cijenjen proizvod na tržištu Ujedinjenog Kraljevstva. U usporedbi sa mesom drugih mesnih pasmina sadrži veći udio bjelančevina i željeza, a puno manji kolesterola. Osim uzgoja za proizvodnju mesa, pasmina se često uzgaja za potrebe hobija i izložbi. Razlog leži u tome da goveda ove pasmine privlače pozornost svojim eksterijerom zbog neobično duge i valovite dlake, te velikih rogova, što je dosta različito od drugih pasmina goveda.
Abstract (english)
Highland cattle are derived from Scotland. Today, it is mainly grown in the United Kingdom, but there are breeding organizations around the world. On the territory of the Republic of Croatia there is a very small number, about 1% of the total of 4% of other breeds that are less represented. It’s beef cattle breed extremely suitable for extensive breeding, as it adopts unfavourable weather conditions and exploits the feed of lower quality. They have a pronounced motherly instinct, and ease of calving. The meat from the Highland breed is characterized by great softness and juiciness, and is a respected product on the United Kingdom market. Compared to meat of other beef cattle breeds, it contains a higher proportion of protein and iron, and much lower cholesterol. In addition to breeding for meat production, breeds are often grown for the needs of hobbies and exhibitions. The reason is that the cattle of these breeds are attracted to their exterior due to their unusually long and wavy hairs and large horns, which is quite different from other breeds of cattle.
