Abstract
U ovom radu opisana je tehnologija proizvodnje pilećeg mesa. Tov pilića ovisno o uzgojnom tipu dijeli se na intenzivan, ekstenzivan i ekološki tov. Intenzivan tov traje od 35 do 42 dana starosti pilića, ali kada se pilići uzgajaju na ekološki način tov traje oko dva i pol mjeseca. U intenzivnom tovu hranidbeni, temperaturni, higijenski i drugi uvjeti moraju biti pod strogom kontrolom. S 42 dana starosti pilići u intenzivnom tovu trebaju postići tjelesnu masu od 2,5 kg uz konverziju hrane 1,7 kg. U ekstenzivnom tovu to je puno teže postići zato što su uvjeti uzgoja puno drugačiji. Pileće meso zauzima značajno mjesto u ljudskoj prehrani, osobito radi jednostavnost pripreme, niske cijena i nutritivne vrijednosti.
Abstract (english)
This paper describes the technology of chicken meat production. Chicken fattening, depending on the breeding type, is divided into intensive, extensive and ecological. Intensive fattening lasts 35 to 42 days of chicken age, but when the chickens are grown ecologicaly, fattening takes about two and a half months. In intensive fattening, feed, temperature, hygienic and other conditions must be strictly controlled. With 42 days of age chickens in intensive fattening should achieve body weight of 2.5 kg with a feed conversion of 1.7 kg. In extensive fattening this is much harder to achieve because the breeding conditions are very different. Chicken meat occupies a significant place in human nutrition, especially because of its ease of preparation, low price and high nutritional value.
