Abstract
U ovom radu je opisan postupak dobivanja džema i želea od jagoda za dijabetičare, od načina sadnje sadnica jagoda, brige od sadnicama i berbe, do načina pripreme samih džemova i želea. Kod pripreme džemova i želea, najvažniji je postupka želirana jer je to najbitnije svojstvo tih dvaju proizvoda i treba obratiti pažnju koji se proizvodi koriste, koliki im je udio pektina, koji omogućuje postupak želiranja, te pri koji se temperaturama smjese kuhaju i na koji na čin se pakiraju i skladište. S obzirom da se radi o proizvodima koji su namijenjeni dijabetičarima, treba obratiti pažnju na količinu šećera koji se dodaje smjesi voća, pektina i kiseline. Kao zamjena za šećer u proizvodnji želea, koristi se agar-agar koji se dobije iz alge i manje je štetan za zdravlje.
Abstract (english)
This paper shows the procedure of getting jam and jellies from stawberrys ment for diabetic, from planting seads of strawberrys, taking care of them and harvesting, to the procedure of making jams and jellys. When making jams and jellys, the most important is the garnish procedure because its the main charasteristic of those two products and the focus is on which ingridients are used, such as which fruit, how much pectin they have, which is the key for the garnish procedure, and the temperatures used when cooking the ingridients and the packing. Considering these two products are ment for diabetics, a lot of atenttion needs to be put on how much sugar is added to the mixture of fruit, pectin and acid. When making jelly, as the replacement for the sugar, it can be used agar-agar which we get from the seaweed and it s less harmful for the health.
