Abstract
Procesi su svuda oko nas. Oni nas okružuju, a da mi to i ne primjećujemo. Neki su jednostavni, neki komplicirani i složeni. No, bez obzira na to, oni igraju ključnu ulogu u našem svakodnevnom životu. Oni predstavljaju niz aktivnosti koje se poduzimaju kako bi se postigao određeni cilj. Kako bi se procesi mogli analizirati te utvrditi njihova efikasnost, potrebno je detaljno proučiti njihovu strukturu, a kako bi se navedeno postiglo, proces se rastavlja na sastavne dijelove. Procesna analiza se sastoji od dva koraka. Prvi je procesna analiza radi utvrđivanja efikasnosti postojećeg procesa, da bi se potom tražili uzroci navedenom stanju i mogućnosti njegovog poboljšanja. U samom utvrđivanju efikasnosti ključnu ulogu imaju sustavi mjerenja procesnih performansi. Drugi korak predstavlja traženje praktičnih rješenja problema nedostatne efikasnosti procesa i primjenu pronađenih rješenja na grafikonu. Po obavljenoj analizi slijedi organizacija implementacije novog procesa. U radu je istraživan prošireni proces proizvodnje suhomesnatih proizvoda na obiteljskom gospodarstvu koji započinje vlastitom proizvodnjom poljoprivrednih proizvoda odnosno stočne hrane, uzgojem i tovom svinja, uslužnim klanjem i završava obradom i preradom mesa u finalne proizvode. Kroz procesni pristup nastojalo se utvrditi u kojim podprocesima postoje neefikasnosti te su uz predložene sustave KPI definirana ograničenja pojedinih procesa. Poboljšanja koja su ponuđena proizlaze iz relativno jednostavne procesne analize. Stvarna poboljšanja mogu se ponuditi tek nakon prikupljanja svih relevantnih podataka (tehnoloških i ekonomskih) na temelju kojih će se, uz primjenu prikladnih modela, ponuditi stvarna optimizacija problema – u konkretnom slučaju povećanja obujma proizvodnje finalnih proizvoda od mesa.

Processes are all around us. They surround us, without us noticing it. Some are simple, some complex. But no matter what were they like, they play crucial role in our every-day life. They represent a sequence of activities that are being done in order to accomplish specific goal. In order to analyze processes and determine their efficiency, thrall study of their structure must be performed. To achieve so, process is dissembled to its essential parts. Process analysis consists of two parts. First one is to determine efficiency of existing process, if possible, and afterwards, causes to that condition are searched for. Process performance measurement system plays vital role in determination of process efficiency. Step two consists of searching for practical solutions to problem of insufficient process efficiency and their application in graph. After all this is done, process implementation can be organized. In this paper a research was done on an extended process of production of cured meats on the family farm, which begins with production of agricultural products and animal feed for purpose of animal and meat production, breeding and fattening pigs, slaughtering services and end processing and meat processing into final products. With appliance of process approach objective was to determine which sub processes are inefficient and along the proposed systems KPI, limits of individual processes are defined. Improvements that have been offered are result of relatively simple process analysis. The actual improvements can be offered only after collecting all the relevant data (technological and economic) on the basis of which, with appliance of proper models, will real optimization be offered - in this particular case to increase the volume of production of meat products.
